Description

This creamy tomato basil soup is perfect for a cozy meal. It’s rich, flavorful, and easy to make!


Ingredients

  • ¼ cup salted butter
  • 2 tablespoons tomato paste
  • 3 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon basil pesto
  • ½ teaspoon dried basil
  • ¼ teaspoon pepper
  • ¼ cup all-purpose flour
  • 2½ cups milk
  • 1 can crushed tomatoes with Italian herbs (28oz or 798ml)
  • ½ cup grated Parmesan cheese
  • 12 tablespoons granulated sugar
  • Fresh basil (for serving)

Instructions

  1. Melt the butter in a large soup pot over medium-low heat. Add the tomato paste, garlic, salt, pesto, dried basil, and pepper and cook for 1 minute.
  2. Whisk in the flour, until no white remains.
  3. Add the milk and whisk until combined. Increase the heat to medium and cook, stirring frequently, until thickened.
  4. Add the tomatoes and Parmesan and stir until combined. Heat through.
  5. Stir in the sugar to taste and serve with fresh basil.

Notes

  • For a spicier kick, add red pepper flakes while cooking.
  • Serve with crusty bread for a complete meal.
