Description

A delicious air-fried cauliflower dish seasoned with ras el hanout, perfect as a side or a light main course.

Ingredients

Scale
  • 1 head cauliflower (about 1 1/2 to 2 lb), including greens, cut into bite-sized pieces
  • 1 medium red onion, thinly sliced into slivers
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon ras el hanout
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 lemon, zested and juiced
  • Fresh chopped parsley or cilantro, for garnish (optional)

Instructions

  1. Get ready. Preheat the air fryer to 400°F.
  2. Season the vegetables. In a large mixing bowl, combine the cauliflower and the red onion slivers. Drizzle with the olive oil, and sprinkle in ras el hanout, salt, and black pepper. Toss well until everything is evenly coated.
  3. Air fry the cauliflower. Arrange the vegetables in a single layer in the air-fryer basket. If necessary, cook in batches. Cook, shaking the basket or flipping the florets about halfway through, until cauliflower florets are completely tender and the edges of the vegetables begin to singe to a pleasant golden-brown color, 15 to 20 minutes.
  4. Finish and serve. Once done, transfer cauliflower to a serving bowl or platter. Immediately sprinkle with lemon zest and drizzle with the lemon juice. Toss gently to combine. Top with chopped parsley or cilantro, if you like.

Notes

  • Make sure to cut the cauliflower into evenly sized pieces for even cooking.
  • Adjust the seasoning according to your taste.
  • You can serve this dish as a side or as part of a vegetarian meal.
