Description

Delicious and easy chicken fajitas made in the air fryer with fresh vegetables.


Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 small flour tortillas
  • Toppings: sour cream, salsa, guacamole, shredded cheese, lime wedges

Instructions

  1. Preheat your air fryer to 380°F.
  2. In a large bowl, combine sliced chicken, bell peppers, red onion, olive oil, fajita seasoning, salt, and black pepper. Toss to coat evenly.
  3. Place the mixture in the air fryer basket in a single layer.
  4. Cook for 12-15 minutes, shaking the basket halfway through, until the chicken is cooked through and veggies are tender.
  5. Warm the flour tortillas in a dry skillet for a few seconds or wrap them in foil and place in the air fryer for 2 minutes.
  6. Serve the fajita mixture on tortillas with your favorite toppings.

Notes

  • For extra flavor, marinate the chicken for an hour before cooking.
  • Feel free to add more vegetables like zucchini or corn.
