Description

A delicious and creamy avocado toast topped with perfectly fried eggs, ideal for a hearty breakfast or brunch.


Ingredients

  • 4 thick slices multigrain or sourdough bread
  • 1 large avocado
  • 1/3 cup plain yogurt (Greek yogurt or sour cream)
  • 1 tbsp fresh lemon juice (from about half a lemon)
  • Zest from one lemon (optional)
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp unsalted butter
  • 4 large eggs
  • Sprinkle of chili flakes (to taste)
  • 1/2 tsp kosher salt (or to taste)
  • 1/4 tsp ground black pepper (or to taste)

Instructions

  1. Gather all ingredients on your countertop.
  2. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. Add yogurt, lemon juice, and optionally, lemon zest. Mash until creamy, seasoning with salt and pepper.
  4. Toast the bread in a toaster or grill until golden and crispy. Drizzle with olive oil.
  5. Melt butter in a skillet over medium heat. Crack in the eggs and baste the whites with melted butter while frying.
  6. Sprinkle eggs with salt and pepper, and chili flakes if desired.
  7. Spread avocado crema on each slice of toast and place a fried egg on top. Drizzle with olive oil and sprinkle with more chili flakes if desired.
