A classic grilled cheese sandwich made with sourdough bread and a blend of sharp cheddar and mozzarella cheeses.

- 4 slices sourdough bread
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons mayonnaise
- 1 tablespoon unsalted butter
Instructions
- Grate the cheddar and mozzarella cheeses for better melting.
- Spread mayonnaise on one side of each slice of bread.
- Place one slice mayo-side down in a skillet and top with both cheeses.
- Add the second slice of bread mayo-side up to form a sandwich.
- Cook on medium-low heat for 3-4 minutes per side, pressing gently, until golden and the cheese is melted.
- Let rest 1 minute before slicing and serving.
Notes
- For a crispier sandwich, use more butter in the skillet.
- Feel free to add other ingredients like tomatoes or bacon for variations.
