Description
Delicious blueberry rolls filled with a creamy blueberry glaze.
Ingredients
Scale
- 1 cup whole milk, lukewarm
- 2 1/4 teaspoons instant or active dry yeast
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted and cooled slightly
- 2 large eggs, room temperature
- 1 teaspoon salt
- 3 1/2 cups all-purpose flour, plus more for dusting
- 2 cups fresh or frozen blueberries
- 1/2 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 2 tablespoons lemon juice
- 2 tablespoons cornstarch
- 2 tablespoons water
- 3 tablespoons unsalted butter, melted
- 4 ounces cream cheese, softened
- 1 1/2 cups powdered sugar
- 2–3 tablespoons blueberry puree or mashed blueberries
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk or heavy cream
Instructions
- Warm the milk until just lukewarm, then whisk it with the yeast and granulated sugar and let it sit until foamy.
- Add the melted butter, eggs, and salt, then gradually mix in the flour until a soft dough forms.
- Knead the dough until smooth and elastic, place it in a greased bowl, cover, and let rise until doubled in size.
- Cook the blueberries with brown sugar, cinnamon, and lemon juice until the berries burst, then thicken with the cornstarch slurry and cool completely.
- Roll the risen dough into a large rectangle and brush it with melted butter, then spread the cooled blueberry filling evenly over the surface.
- Roll the dough into a tight log from the long side and cut it into 12 even slices.
- Arrange the slices in a greased 9×13-inch pan, cover, and let rise again until puffy and nearly touching.
- Bake the rolls at 350°F (175°C) for 22–26 minutes, until deep golden and cooked through.
- Beat the cream cheese until smooth, then whisk in the powdered sugar, blueberry puree, vanilla, and milk or cream to make a thick but pourable glaze.
- Drizzle or spread the blueberry cream cheese glaze over the warm rolls and serve.
Notes
- Ensure the milk is not too hot to avoid killing the yeast.
- The rolls taste best when served warm.
- Blueberry puree can be made by blending fresh or thawed blueberries.
