Description

A creamy and cheesy scalloped potato dish layered with ham, perfect for any occasion.


Ingredients

Scale
  • 3 pounds potatoes (Russet or Yukon Gold, thinly sliced)
  • 2 cups cooked ham (diced)
  • 1 cup onion (diced)
  • 1 can (10 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Spray the inside of your slow cooker with cooking spray.
  2. In a large bowl, mix together cream of mushroom soup, sour cream, milk, garlic powder, salt, and pepper until well combined.
  3. Layer half of the sliced potatoes in the bottom of the slow cooker.
  4. Top with half of the diced ham and half of the diced onion.
  5. Pour half of the cream mixture over the layers.
  6. Repeat layers with remaining potatoes, ham, onion, and cream mixture.
  7. Cover and cook on HIGH for 4 hours or on LOW for 6-8 hours, until potatoes are tender.
  8. Sprinkle shredded cheddar cheese on top during the last 15 minutes of cooking. Cover and let cheese melt.
  9. Let stand for 10 minutes before serving to allow the sauce to thicken.

Notes

  • This dish is great for leftovers and can be reheated easily.
  • Feel free to add other vegetables like broccoli or carrots for added nutrition.
