Ingredients

  • 8 oz cremini mushrooms, sliced
  • 4 cups vegetable broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your vegetables by dicing the onions, carrots, and celery.
  2. In a large pot over medium heat, heat olive oil. Sauté onions until translucent, then add minced garlic until fragrant.
  3. Add sliced mushrooms and cook until softened and juices release.
  4. Stir in white beans and pour in vegetable broth. Bring to a gentle simmer.
  5. Season with salt, pepper, thyme, and rosemary. Simmer for about 20 minutes.
