- 2 cans (15 oz each) white beans, drained and rinsed
- 8 oz cremini mushrooms, sliced
- 4 cups vegetable broth
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 2 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prep your vegetables by dicing the onions, carrots, and celery.
- In a large pot over medium heat, heat olive oil. Sauté onions until translucent, then add minced garlic until fragrant.
- Add sliced mushrooms and cook until softened and juices release.
- Stir in white beans and pour in vegetable broth. Bring to a gentle simmer.
- Season with salt, pepper, thyme, and rosemary. Simmer for about 20 minutes.
- Taste and adjust seasonings before serving hot with bread or rice.
