Description

Ingredients

- 2 cups cottage cheese
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Instructions
- In a large mixing bowl, add cottage cheese.
- Add cherry tomatoes, cucumber, red bell pepper, and red onion to the bowl.
- Drizzle olive oil and lemon juice over the ingredients.
- Gently mix everything until well combined.
- Season with salt and black pepper to taste. Sprinkle with fresh parsley before serving.
