Description

  • 2 cloves Garlic (minced)
  • 1 teaspoon Chili Powder (adjust amount to taste)

  • 8 Tortillas (flour or corn; warm before using)
  • 1 cup Shredded Cheese (cheddar, Monterey Jack, or Mexican blend)

Instructions

  1. In a skillet over medium heat, brown the ground beef and chopped onion for 5-7 minutes until fully cooked. Add minced garlic, chili powder, cumin, paprika, salt, and pepper, then stir in the tomato sauce and simmer for another 2 minutes.
  2. To prevent cracking, heat the tortillas in a skillet for about 10 seconds on each side or microwave them for a few seconds until pliable.
  3. Spoon approximately 2 tablespoons of the beef mixture onto each tortilla, sprinkle with shredded cheese, and roll tightly, tucking in the sides.
  4. Preheat your oven to 425°F (220°C). Arrange the taquitos seam-side down on a lined baking sheet. Brush the tops lightly with oil and sprinkle with more cheese. Bake for 15-18 minutes or until golden brown and crispy; consider broiling for the last minute.
