- 1/2 cup corn starch
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 pounds chicken wings
- 4 tablespoons unsalted butter
- 1 medium shallot
- 4 cloves garlic
- 1/3 cup fish sauce
- 2 tablespoons granulated sugar
- 1/4 cup water
- Oil for frying
- 1 lime wedges
- As desired optional garnishes (Green onion, cilantro, red chili peppers)
Instructions
- In a large bowl, combine all-purpose flour, corn starch, salt, and pepper. Toss the chicken wings in this mixture, ensuring they’re well-coated. Let them sit for 30 minutes to absorb those delicious flavors.
- While the wings are resting, melt the unsalted butter in a skillet over medium heat. Add minced shallot and garlic, sautéing until fragrant and golden brown, about 3-4 minutes.
- Pour in the fish sauce, add granulated sugar, and water to the skillet. Simmer this mixture until reduced by half, stirring occasionally, which should take about 5-6 minutes.
- In a heavy-bottomed pot, heat oil to 350°F. Set up a cooling rack on a paper towel-lined baking sheet for draining.
- Carefully fry the chicken wings in batches for 6-8 minutes until golden brown and the internal temperature reaches 180°F.
- In a large mixing bowl, combine the hot wings with the prepared sauce, tossing gently until they are evenly coated. Serve with lime juice and garnishes.
Notes
- Allow the wings to sit in the flour mixture for maximum flavor absorption.
- Make sure to use high smoke point oil for frying to achieve a crispy texture.
