- 1 ½ pounds boneless, skinless chicken breasts
- 1 (20 oz) package refrigerated cheese tortellini
- 4 cups chicken broth
- 1 (10 oz) can cream of chicken soup
- 1 (8 oz) package cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
Instructions
- Layer the chicken breasts at the bottom of your slow cooker. Pour in the chicken broth and add the cream of chicken soup. Sprinkle garlic powder, onion powder, Italian seasoning, salt, and black pepper over the top. Gently stir around the edges to combine without disturbing the chicken too much.
- Slow cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender enough to shred easily with two forks.
- Shred the chicken and return it to the slow cooker. The broth should be rich and flavorful, soaking into every strand of chicken.
- Add the softened cream cheese and stir until it melts into the sauce. Then add the cheese tortellini. Cook on high for another 30–40 minutes until the tortellini is tender.
- Finish by adding chopped spinach and grated Parmesan cheese. Let it cook for about 5–10 more minutes until the spinach wilts and the sauce thickens slightly.
Notes
- For best results, do not over-stir the ingredients in the slow cooker to keep the chicken intact.
- You can add more vegetables like carrots or peas for added nutrition.
