Description

This decadent pecan pie is perfect for any occasion. With a blend of eggs, corn syrup, and crunchy pecans, it’s a delightful treat!


Ingredients

  • 6 large eggs
  • 1 cup light corn syrup (240ml)
  • ¾ cup granulated sugar (150g)
  • 2 tbsp unsalted butter (28g, for dairy-free, use Smart Balanced butter)
  • 2 tsp pure vanilla extract
  • ¼ tsp salt
  • 2 cups pecans (200g)

Instructions

  1. Preheat oven to 350°F. Generously grease a 9-inch pie dish with butter or cooking spray.
  2. In a large bowl, whisk together eggs, corn syrup, sugar, melted butter, vanilla extract, and salt. Whisk until smooth and well combined.
  3. Stir in pecans until evenly distributed.
  4. Pour mixture into prepared pie dish, spreading pecans evenly across the surface.
  5. Bake for 45–50 minutes, until the center is set but still slightly jiggly. A knife inserted near the center should come out mostly clean.
  6. Remove from oven and cool on a wire rack for at least 2 hours before slicing. Serve at room temperature or chilled.

Notes

  • For a dairy-free option, substitute unsalted butter with Smart Balanced butter.
  • Serve with whipped cream for extra indulgence!
