- 6 large eggs
- 1 cup light corn syrup (240ml)
- ¾ cup granulated sugar (150g)
- 2 tbsp unsalted butter (28g, for dairy-free, use Smart Balanced butter)
- 2 tsp pure vanilla extract
- ¼ tsp salt
- 2 cups pecans (200g)
Instructions
- Preheat oven to 350°F. Generously grease a 9-inch pie dish with butter or cooking spray.
- In a large bowl, whisk together eggs, corn syrup, sugar, melted butter, vanilla extract, and salt. Whisk until smooth and well combined.
- Stir in pecans until evenly distributed.
- Pour mixture into prepared pie dish, spreading pecans evenly across the surface.
- Bake for 45–50 minutes, until the center is set but still slightly jiggly. A knife inserted near the center should come out mostly clean.
- Remove from oven and cool on a wire rack for at least 2 hours before slicing. Serve at room temperature or chilled.
Notes
- For a dairy-free option, substitute unsalted butter with Smart Balanced butter.
- Serve with whipped cream for extra indulgence!
