Delicious and healthy chocolate-covered stuffed dates filled with creamy peanut butter and roasted peanuts.

- 12 Medjool dates
- 6 tablespoons creamy peanut butter
- 3 tablespoons roasted peanuts
- 1 cup dark chocolate chips or chopped bar
- 1 teaspoon coconut oil (optional)
- 1 teaspoon flaky sea salt
Instructions
- Slice each Medjool date lengthwise on one side and remove the pit, keeping the date intact like a pocket.
- Fill each date with about 1/2 tablespoon of creamy peanut butter using a small spoon or spatula.
- Press 2–3 roasted peanuts into the peanut butter filling in each date.
- Place all stuffed dates on a parchment-lined baking sheet and freeze for 15–20 minutes to firm up.
- In a microwave-safe bowl or double boiler, melt the dark chocolate with coconut oil until smooth.
- Dip each chilled date into the melted chocolate using a fork, then let excess drip off.
- Place dipped dates back onto the parchment-lined tray.
- Immediately sprinkle each with a pinch of flaky sea salt before the chocolate hardens.
- Chill again in the fridge or freezer until fully set.
- Serve and enjoy!
