- 1 cup toasted pecans, chopped
- 1/2 cup powdered sugar (for rolling)
- 1 tsp vanilla extract

Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Mix in the vanilla extract. Gradually add the flour, baking powder, and salt; stir until just combined.
- Gently fold in the chopped pecans.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about two inches apart.
- Bake for 12-15 minutes until lightly golden around the edges.
- Allow cooling slightly before rolling in powdered sugar.
