Ingredients

- 1 lb ground beef or chicken
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup bell peppers, sliced
- 1/2 cup onions, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Low-carb wraps or lettuce leaves for wrapping
Instructions
- Heat olive oil in a skillet over medium heat until shimmering.
- Sauté onions and bell peppers for 3-5 minutes until softened.
- Add ground beef (or chicken), season with salt and pepper, and cook until browned, about 5-7 minutes.
- Stir in shredded Monterey Jack cheese until melted.
- Spoon the mixture onto low-carb wraps or lettuce leaves.
- Roll them up tightly and place seam side down on a plate. Serve warm.
