A delicious Korean-inspired cheesesteak with marinated beef, melty cheese, and tangy kimchi.

- 1 pound thinly sliced beef ribeye or sirloin
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1 tablespoon rice vinegar
- 1 tablespoon gochujang (Korean chili paste)
- 1 small onion, thinly sliced
- 1 cup chopped kimchi (drained slightly)
- 4 hoagie rolls
- 8 slices provolone or mozzarella cheese
- 1 tablespoon vegetable oil
- 1 tablespoon sesame seeds (optional)
- 2 green onions, sliced
Instructions
- Marinate the Beef: In a medium bowl, whisk together soy sauce, sesame oil, brown sugar, garlic, ginger, rice vinegar, and gochujang. Add the thinly sliced beef and toss until fully coated. Let it marinate for at least 20–30 minutes.
- Prepare the Rolls: Lightly toast the hoagie rolls in the oven at 350°F for about 5 minutes. You want them warm and slightly crisp on the outside but still soft inside.
- Cook the Beef and Onions: Heat vegetable oil in a large skillet over medium-high heat. Add the sliced onions and cook for 2–3 minutes until softened. Then add the marinated beef. Cook quickly, stirring often, until the beef is browned and caramelized, about 4–5 minutes.
- Add the Kimchi: Stir in the chopped kimchi and cook for another 2 minutes. The kimchi warms up and mellows slightly while still keeping its signature tang.
- Melt the Cheese: Lower the heat. Divide the beef mixture into four portions in the skillet. Lay two slices of cheese over each portion. Cover the skillet for 1–2 minutes to help the cheese melt beautifully over the beef.
- Assemble the Sandwiches: Carefully scoop each cheesy portion into a toasted hoagie roll. Sprinkle with sesame seeds and sliced green onions.
- Serve immediately while everything is hot, melty, and full of bold flavor.

- This marinade can be prepared in advance for added flavor.
- Feel free to adjust the level of gochujang to your spice preference.
