Description

This Garlic Lemon Chicken with Spinach is a quick and healthy dish packed with flavor.


Ingredients

Scale
  • 4 pieces chicken breasts (boneless and skinless)
  • 2 cloves garlic (minced)
  • 2 tablespoons extra-virgin olive oil
  • 1 whole lemon (zested and juiced)
  • 4 cups fresh spinach (vibrant green, stems removed)
  • to taste salt
  • to taste freshly cracked black pepper
  • pinch red pepper flakes (optional)

Instructions

  1. Pound chicken breasts to even thickness.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add chicken and cook for 6–7 minutes per side until golden and fully cooked.
  5. Remove chicken and set aside.
  6. Add garlic to the skillet and sauté briefly until fragrant.
  7. Add spinach to the skillet and cook until wilted.
  8. Stir in lemon juice and zest.
  9. Return chicken to the skillet and toss with spinach and garlic.
  10. Season with additional salt, pepper, and red pepper flakes.
  11. Serve warm.

Notes

  • This dish is best served warm and can be paired with rice or a salad.
  • The red pepper flakes add a nice kick, but can be omitted if desired.
