- 2 medium zucchinis, sliced into half-moons
- 8 oz cremini or button mushrooms, sliced
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 2 tbsp soy sauce
Instructions
- Wash zucchinis and slice them into half-moons. Clean mushrooms with a damp paper towel and slice.
- In a large skillet over medium heat, add olive oil until shimmering.
- Add minced garlic to the skillet and sauté for about one minute until fragrant.
- Add zucchini slices and cook for about five minutes until they start to soften.
- Stir in sliced mushrooms and soy sauce; cook for another five minutes until veggies are tender.
- Transfer to plates, garnishing with fresh herbs or cheese if desired.
