Description

A quick and delicious dish of sautéed zucchini and mushrooms, perfect as a side or a light main.


Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 8 oz cremini or button mushrooms, sliced
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce

Instructions

  1. Wash zucchinis and slice them into half-moons. Clean mushrooms with a damp paper towel and slice.
  2. In a large skillet over medium heat, add olive oil until shimmering.
  3. Add minced garlic to the skillet and sauté for about one minute until fragrant.
  4. Add zucchini slices and cook for about five minutes until they start to soften.
  5. Stir in sliced mushrooms and soy sauce; cook for another five minutes until veggies are tender.
  6. Transfer to plates, garnishing with fresh herbs or cheese if desired.
