Description

This pasta dish combines shrimp, pesto, and fresh ingredients for a quick and easy meal.


Ingredients

  • 1 pound medium pasta (such as farfalle or penne)
  • 8 ounces shrimp (cooked)
  • 1 teaspoon olive oil
  • ¼ cup finely diced onion
  • ½ cup pesto sauce
  • ½ teaspoon lemon zest
  • to taste salt and pepper
  • shredded parmesan cheese (for garnish, optional)
  • chopped fresh basil (for garnish, optional)

Instructions

  1. In a large pot, cook pasta according to package directions. Drain well and reserve ½ cup pasta water.
  2. In a large skillet, cook onion in olive oil until tender.
  3. Add shrimp to heat through without re-cooking, about 2-3 minutes.
  4. Add pasta, lemon zest, and pesto sauce and toss to combine. Add some pasta water if needed.
  5. Season with salt and pepper to taste and garnish with parmesan and fresh basil if desired.

  • This recipe can be customized with vegetables like spinach or cherry tomatoes.
  • For extra flavor, consider adding garlic or a splash of lemon juice.
