Spicy Chicken Tacos

Description

Delicious spicy chicken tacos perfect for any occasion, topped with fresh ingredients and a creamy sauce.


Ingredients

  • 1 pound ground chicken
  • 1 cup finely chopped onion
  • 2 cloves garlic (finely chopped)
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper powder (optional)
  • 8 medium corn tortillas
  • 2 tablespoons vegetable oil
  • 1 cup coarsely chopped cilantro (lightly packed)
  • 1/2 jalapeno pepper (remove seeds to make it less spicy)
  • 1 clove garlic
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • salt to taste

Instructions

  1. Mix the chicken. Mix the ground chicken, chopped onion, garlic, chili powder, coriander powder, paprika, ground cumin, salt and cayenne together in a large mixing bowl.
  2. Scoop about 1/4 cup of the mixture onto each tortilla, then use the back of a spoon or fork to spread it evenly from edge to edge.
  3. Use a non-stick pan that can fit 2–3 tortillas at once. If your pan is smaller, you’ll need to cook one taco at a time. Another option is to use two pans so you can cook multiple tacos simultaneously.
  4. Heat a little oil in a pan over medium-high heat. Place a tortilla with the chicken side down and cook for 4–5 minutes. Flip it and cook for another 1–2 minutes. Repeat with the remaining tortillas, adding your favorite taco toppings, or use our given method to serve.
  5. Top each cooked chicken tortilla with some pico de gallo and a drizzle of the sauce. Enjoy!
  6. Add the sauce ingredients into a small blender and process until smooth.
