Description

Ingredients

  • 1 pound sirloin steak, cut into bite-sized pieces
  • 8 ounces shell pasta
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Begin by cooking the shell pasta according to package instructions. Drain and set aside, reserving a small amount of pasta water.
  2. In a large skillet, heat 2 tablespoons of the olive oil over medium-high heat. Once heated, add the bite-sized pieces of sirloin steak and season with salt and black pepper. Sear the steak for about 2-3 minutes on each side or until browned to your desired doneness. Remove the steak from the skillet and set it aside.
  3. In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil and the 4 tablespoons of unsalted butter. Let the butter melt and become bubbly.
  4. Stir in the minced garlic and cook for about 1 minute, until fragrant but not browned.
  5. Gradually pour in the heavy cream, stirring continuously to combine. Allow the mixture to simmer for about 2-3 minutes to thicken.
  6. Add the grated Parmesan cheese to the sauce, whisking until it is completely melted and integrated. If the sauce becomes too thick, you can add a little reserved pasta water to reach your desired consistency.
  7. Add the cooked shell pasta into the sauce, tossing gently to coat the pasta thoroughly. Then, fold in the cooked steak bites, allowing them to warm through for an additional minute.
  8. Taste and adjust the seasoning, adding more salt and black pepper if needed.
  9. Serve the dish hot, garnished with chopped parsley.
