  • 2 large eggs, beaten

  • ¾ cup Thai sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Prepare the chicken coating by seasoning the chicken pieces with salt and pepper. Dip each piece into the beaten eggs, then coat thoroughly in cornstarch. This simple coating creates that irresistible crispy exterior once fried.
  2. Fry until golden and crisp the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the chicken in batches. Fry for about 4–5 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
  3. Prepare the sweet chili sauce mixture a small bowl, whisk together Thai sweet chili sauce, soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil. This sauce is where the magic happens. It’s sweet, slightly tangy, gently spicy, and deeply savory all at once.
  4. Toss the chicken in the sauce excess oil from the pan, leaving about a tablespoon behind. Return the chicken to the skillet and pour the sauce over it. Cook for 2–3 minutes, stirring gently, until the sauce thickens and coats the chicken beautifully.
  5. Garnish and serve with sliced green onions and sesame seeds. Serve hot over steamed jasmine rice or alongside stir-fried vegetables.
