Description

A flavorful turmeric rice made with long grain rice, perfect as a side dish or base for your favorite proteins.


Ingredients

  • 1 cup long grain rice (white rice like basmati or jasmine)
  • 1 Tbsp butter
  • 1 Tbsp coconut oil (or olive oil)
  • 1/4 cup onion (white or yellow onion, finely diced or grated)
  • 1 tsp garlic (finely minced)
  • 2 tsp turmeric
  • 1 1/2 cups chicken broth
  • 1 bay leaf
  • 1/4 tsp dried thyme
  • 1/4 tsp ground ginger
  • 1/4 tsp salt (to taste)
  • 1/4 tsp pepper (to taste)

Instructions

  1. Rinse the rice in a fine mesh sieve under cool running water until the water runs clear. Set aside.
  2. In a heavy bottom saucepan, melt the butter with the coconut oil over medium-high heat. Add the diced onion and minced garlic and sauté until tender and opaque, about 4-5 minutes.
  3. Add the rinsed rice and turmeric to your saucepan and stir to coat.
  4. Add the chicken broth, bay leaf, dried thyme, ground ginger, salt, and pepper. Stir to combine, then bring to a boil.
  5. Cover with a tight-fitting lid, reduce heat to low, and simmer for 17 minutes.
  6. Remove the lid and fluff the rice with a fork once cooked. Serve immediately, or cover until ready to serve.

Notes

  • This recipe can be made with either coconut oil or olive oil based on preference.
