Deliciously spiced butter cookies with a hint of cardamom.

- 1 cup unsalted butter
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cardamom
- 2 cups all-purpose flour
- 1/4 teaspoon salt
Instructions
- In a mixing bowl, beat together 1 cup (2 sticks) of unsalted butter and 3/4 cup of granulated sugar until the mixture is light, fluffy, and pale in color.
- Beat in 1 teaspoon of vanilla extract and 1 teaspoon of ground cardamom. Mix until well combined and fragrant.
- Gradually add 2 cups of all-purpose flour and 1/4 teaspoon salt. Mix on low until the dough comes together. Don’t overmix.
- Form the dough into a log, about 2 inches in diameter, wrap it in parchment or plastic wrap, and refrigerate for at least 1 hour until firm.
- Preheat your oven to 350°F (175°C). Slice the dough into 1/4-inch rounds and place them on a parchment-lined baking sheet. Bake for 10-12 minutes, or until the edges are just turning golden.
- Let cookies cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.
