Description

A delicious and flavorful Chicken Bulgogi that is sweet, savory, and slightly spicy.

Ingredients

Scale
  • lbs boneless skinless chicken thighs, cut into bite-size pieces
  • ½ small onion, thinly sliced
  • 3 tablespoons soy sauce
  • 1½ tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon neutral oil (like avocado or canola)
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 green onions, sliced (optional for garnish)
  • Sesame seeds (optional for garnish)

Instructions

  1. Make the Marinade: In a medium bowl, whisk together soy sauce, brown sugar, honey, sesame oil, gochujang, rice vinegar, garlic, and ginger until smooth. The sauce should taste sweet, savory, and just slightly spicy — a balance that defines Chicken Bulgogi.
  2. Marinate the Chicken: Add the chicken pieces and sliced onions to the bowl. Toss everything together to coat well. Cover and refrigerate for at least 30 minutes. For best results, let it marinate overnight to deepen the flavors.
  3. Cook the Chicken Bulgogi: Heat a tablespoon of neutral oil in a large skillet or grill pan over medium-high heat. Once hot, add the marinated chicken in a single layer. Let it cook undisturbed for a few minutes so the sugars caramelize. Flip and continue cooking until the chicken is cooked through and slightly charred on the edges — about 8 to 10 minutes total.
  4. Garnish and Serve: Top with sliced green onions and a sprinkle of sesame seeds, if using. Serve hot with steamed rice, wrapped in lettuce leaves, or over noodles for a satisfying and flavorful meal.

Notes

  • For best flavor, marinate the chicken overnight.
  • Adjust the spiciness by varying the amount of gochujang.
