Description

A light and refreshing citrus meringue dessert topped with whipped cream and fresh citrus segments.


Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1/2 tablespoon cornstarch
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • Zest and juice of 1 lime
  • Assorted fresh citrus segments (orange, lemon, lime, and grapefruit)

Instructions

  1. Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a 9-inch circle on it as a guide.
  2. In a clean, dry bowl, using a handheld mixer or a stand mixer, beat the egg whites on medium speed until they form soft peaks.
  3. Increase the mixer speed to high. Gradually add granulated sugar, one tablespoon at a time, until the mixture becomes glossy and stiff peaks form.
  4. Gently fold in the vanilla extract, vinegar, and cornstarch using a spatula until fully combined.
  5. Spoon the meringue mixture onto the prepared parchment paper circle. Use a spatula to create a slight well in the center to hold the filling later.
  6. Place the meringue in the preheated oven. Bake for 60 minutes or until it’s dry on the outside and slightly cracked but still soft in the middle.
  7. Once baked, turn off the oven and leave the oven door ajar, letting the meringue cool inside for at least 1 hour.
  8. While the meringue cools, beat the heavy cream with powdered sugar until soft peaks form.
  9. In a bowl, combine the zest and juice of the orange, lemon, and lime. Fold this mixture into the whipped cream gently.
  10. Once the meringue is completely cool, carefully remove it from the parchment paper and place it on your serving platter. Top with the whipped citrus cream.
  11. Add your fresh citrus segments on top of the whipped cream, arranging them beautifully for a stunning finish.
