- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 bell peppers, diced (any color)
- 1 can (28 ounces) crushed tomatoes
- 2 cans (15 ounces each) kidney beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup beef broth (or water)
- 1 tablespoon olive oil
- Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Cook the Beef: Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Sauté Vegetables: Add the chopped onion, garlic, and bell peppers to the pot. Sauté until the vegetables are tender, about 5-7 minutes.
- Add Spices: Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for another 2 minutes to toast the spices.
- Add Tomatoes and Beans: Pour in the crushed tomatoes and kidney beans. Mix well.
- Add Broth: Stir in the beef broth, bringing the mixture to a simmer.
- Simmer: Reduce the heat to low and let the chili simmer for at least 30 minutes. Stir occasionally, allowing the flavors to meld together.
- Taste and Adjust: After simmering, taste and adjust seasoning as needed. You can add more spices or salt to your preference.
- Serve: Once the chili is thickened and flavorful, remove it from the heat.
