Description

A comforting and delicious soup made with ground beef, noodles, and cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups beef or chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces egg noodles or broken lasagna sheets
  • 3/4 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley or basil (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef or turkey, breaking it apart while cooking until browned, about 6–8 minutes. Drain excess fat if necessary.
  2. Add chopped onion and sauté for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds until fragrant.
  3. Pour in crushed tomatoes, tomato paste, and broth. Stir in Italian seasoning, salt, pepper, and red pepper flakes. Bring to a boil, then reduce heat and let simmer for 10 minutes.
  4. Stir in noodles and cook until tender, about 8–10 minutes, stirring occasionally.
  5. Scoop soup into bowls and top with ricotta, mozzarella, and Parmesan.
  6. Garnish with fresh parsley or basil. Serve hot and enjoy!

Notes

  • This soup is great for meal prep and can be stored in the refrigerator for up to 3 days.
  • You can substitute ground turkey with chicken for a lighter option.
