Description

A refreshing and healthy shredded chicken salad, perfect for lunch or a light dinner.


Ingredients

Scale
  • 2 cups cooked shredded chicken
  • 2 stalks celery, chopped
  • ¼ cup red onion, chopped
  • ½ cup grapes, quartered
  • ¼ cup fresh parsley, chopped
  • 2 Tbsp walnuts, chopped
  • ½ cup Greek yogurt
  • 12 Tbsp Dijon mustard
  • 1 large lemon, juiced
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Instructions

  1. Shred or chop the chicken, celery, red onion, grapes, walnuts, and parsley.
  2. Whisk together the dressing ingredients in the bottom of a large bowl.
  3. Add the chicken and other ingredients and toss everything together. Give it a taste and add more salt as needed.

  • To make shredding the chicken easy, pulse it a few times in a food processor.
